What is a Vegetable Galette?

Galettes are types of French pastries. They come in different varieties including circular cakes, free-form pies, buckwheat crepes, and large, soft cookies. Most variations are sweet, but galettes, like this vegetable galette recipe, can also be savory!

Unlike other pastries, galettes are shaped and baked right on a baking sheet. The edges are folded over to create a crust and hold in the filling. As a result, the filling is left open to view.

Mediterranean-Inspired Ingredients

Below is an overview of the ingredients and instructions for this recipe. Don’t forget to scroll down to the recipe card below for the complete details and instructions!

  • Puff Pastry – Find this in the frozen or refrigerated section of your local grocery store. If frozen, just make sure to thaw it first!
  • Cheese – Ricotta cheese forms the base of the layers. Then, we incorporated crumbled feta for a creamy texture and a tangy taste.
  • Vegetables – Sun-dried tomatoes, artichoke hearts, and grape tomatoes add lots of color, nutrients, and a bold, savory flavor.
  • Olives – We use a combination of green olives and kalamata olives to add a briny flavor.
  • Seasonings – Salt, pepper, and dried oregano enhance the savoriness of the ingredients.
  • Olive Oil – This helps caramelize the veggies and adds a peppery taste!
  • Egg – A whisked egg is brushed over the puff pastry, creating a crisp golden crust.
