Bake-at-home fluffy, date-studded sponge with a crazily delicious sticky toffee sauce. Who could possibly resist? (Answer: not us.) We “borrowed” this recipe from Stephanie Alexander (and we’re not giving it back any time soon) and tweaked it to deliver you a home-made pudding mix, ready to bake, drench in warm caramel sauce and elevate you to the status of household legend.

To Serve

We are big fans of the fact that cream or ice cream on the side of a sticky winter pudding somehow “lightens” it. But it does, and we’re sticking with it.

Preheat oven (FF) 180C and remove the plastic film, greaseproof paper and sachet of sauce. DEFROSTED: Place the foil tray in the oven and cook for 40 minutes or until the skewer comes out clean. FROZEN: Place the foil tray in the oven and cook for 50 minutes or until a skewer comes out clean. Heat the sauce in a microwave-safe container or a saucepan.
