Church community fundraiser recipe book cookbook THANK HEAVEN FOR HOME MADE COOKS … YUMMY RECIPES, compiled by the Women’s Missionary Society of McKenney Baptist Church, McKenney, VA Virginia. Of special interest is a Dedication page honoring India Anna Virginia Jones Wagstaff (see image). Although cookbook is not dated, there is a calendar page at rear for the years 1991, 1992 and 1993, so I’m assuming this is 1991. Also at the end of cookbook is an offer to order copies for $10.00/copy plus $2.00 postage&handling … and that was more than 25 years ago! This recipe book measures approx 6-1/2”x 9-1/4” with 209 indexed pages. Cookbook is full of typed-format recipes with no advertising or illustrations filler, and with 563 recipes and 89 unique contributors, you KNOW there is a good variety of MANY good recipes!

Sample Recipe(s):

Easy Lasagne
1 lb ground beef
32-oz jar thick spaghetti sauce
1-1/2 cup water
2 cup (15-oz container) Ricotta or cottage cheese
3 cup (12-oz) shredded Mozzarella cheese
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped parsley
1 tsp salt
1/4 tsp pepper
8-oz lasagne, UNCOOKED
Brown beef, drain off excess fat. Add sauce and water, simmer about 10 minutes. Combine remaining ingredients, except lasagne for filling.
Pour about 1-cup sauce on bottom of 13x9x2-inch pan. Layer 3 pieces of uncooked lasagne over sauce. Spread half of cheese filling over sauce.
Repeat layers of lasagne, sauce and cheese filling. Top with layer of lasagne and remaining sauce. Cover with foil and bake at 350-degrees for 55 to 60 minutes.

Family-Size Brunswick Stew
2-1/2 to 3-lb chicken
2 pieces celery
1 small onion
2 qt tomatoes, fresh or canned
1 cup chopped onion
3 medium white potatoes, peeled, but still whole
1 qt green butter beans, drain if canned
1 qt whole kernal corn, drain if canned
5 Tbsp sugar
salt to taste
red & black pepper to taste
Place chicken, celery and small onion in a large kettle. Add about a quart of water. Simmer until meat is tender or begins to loosen from bones. Lift chicken from broth. Cool the broth and discard the celery. Remove meat from bones and cut into small pieces.
Add tomatoes, chopped onions and whole potatoes to broth. Continue cooking over medium heat. Remove potatoes when tender, mash and return to stew. (Some cooks omit this step and dice the potatoes before adding them to the stew.)
Add cut-up chicken, butter beans, corn and sugar. Add salt and pepper to taste.Bring to a boil while stirring. Cover, lower heat and simmer slowly, stirring occasionally to prevent sticking, for 3 to 5 hours, or until tomatoes have cooked to pieces.
Yield: 6 quarts

Condition: Good, and I checked EVERY page to enter all the names! (I include ALL names in ALL fundraiser-type cookbooks because I know how frustrating it is to hope and wonder if specific contributors are included in a book, only to find out they’re not, upon receipt.) Covers and pages are clean and tight to all 15 plastic spirals. No tears, no chips, no defective spirals, no missing pages. Only a small dog-ear on corner tip bottom of page 51/52 and light shelf wear of both covers bottom edges, not bad considering they support a very thick 1” plus book that protected the spirals by being stored upright.
