In Ireland, there are several types of sausage. They all have their own special characteristics, with unique flavors that can’t be found anywhere else. Their uses are different, and they are consumed according to specific meals. The most popular sausages in Ireland include :
- small sausages, mainly served at the Irish Breakfast,
- Bangers, more meaty sausages, served in particular for Bangers and Mash, and Coddle
- Black Pudding, a highly prized black pudding made in the village of Clonakilty
- White Pudding, also from Clonakilty
Irish sausages are generally made from 70% beef or pork (sometimes a mixture of the two). The latter should never be too fatty, to better appreciate the aromas.
The Irish like to fry, bake, grill or poach them. They eat them for breakfast, but also as a main meal, a sandwhich, a hot dog or a wrap…
